Under supervision of the Correctional Supervising Cook, CF, the Cook Specialist II, CF, is responsible for the regular preparation of the day's meals for the Correctional Training Center. In addition, the Cook Specialist II will maintain order and supervise the conduct of persons committed to the Department of Corrections and Rehabilitation, prevent escapes and injury by these persons to themselves or others or to property, maintain security of working areas and work materials, inspect premises and search inmates for contraband, such as weapons or illegal drugs. Duties include:
45% Overall preparation of the menu fare. These activities will include filling raw ingredient orders and hands-on preparation of food using standardized recipes. Will prepare, sauces, soups, gravies, main vegetable, starch, pasta dishes, and salads. Also has responsibility for range and COSIT set-ups and monitoring of Advanced Training and conference refreshments as well as the dining room.
20% Actively participate as alternate food service lead in the serving of meals on various shifts. This post will be responsible for the monitoring and log entry of quality, portion and temperature control of all foods served, including hot line, cold line and desserts.
20% Assist in the supervision and monitoring of an assigned inmate crew in the setup of work and service areas in preparation for the day's work. Assist in supervising and monitoring inmates in restoring to order, these same areas after meal service is completed.
15% Assist with culinary record keeping procedures, including: inventory, stock rotation, cleaning and sanitation schedules, all food temperature charts, range schedules and meal count. Assist in dish room when needed. Other duties as assigned.
