Duties and Responsibilities:

Under the supervision of Food Manager, the Food Service Supervisor II directs, coordinates, and standardizes the serving of food in the Main Dining Room; supervises and instructs employees in the service of food; develops, reviews, and revises policies & procedures regarding meal service. Duties include, but are not limited to the following:

Directs and coordinates responsibilities for the Food Service Supervisor I, Food Service Technician II’s and Food Service Technician I’s. Participates in employee job hiring interviews and serves on QAP’s (Qualifications Appraisal Panel). Assigns work to food service personnel; supervises their activities; reviews, and evaluates their performance and recommends appropriate action. Conducts progressive discipline and documents work performance as required following effective personnel management practices. Evaluates and prepares probationary & annual evaluation reports with input from lead staff. Maintains timekeeping for all food service staff in the Main Dining Room; is responsible for the fair approval and disapproves of vacations based on policy and other leave requests within authority limits. Tracks and records the food usage and completes food requisitions to be completed four weeks in advance to service.

Completes meal; dessert, and bread requisitions for four weeks in advance for distribution to the Supervising Cook II or I, and Warehouse. Logs the food usage and adjust counts to accurately reflect usage.

Maintains master staffing schedule for Main Dining Room and coordinates overall employee work schedules to ensure balanced staffing for am and pm shift as well acceptable coverage during staff shortages. Reviews station assignments prepared by Food Service Supervisor I / Food Service Technician II’s to ensure all stations are appropriately staffed. Moves staff from stations as necessary for the completion of work duties during shortages and follows contingency plan. Identifies training needs of employees and coordinates a monthly training program with Assistant Director and Director of Dietetics Develops training materials, recommends the purchase of training supplies, and conducts in-service training for food service personnel and records training. Ensures that Safety Training and RAR training is completed on a monthly basis. Conducts monthly staff meetings for Food Service personnel and ensures meeting minutes are prepared and dispersed. Attend other meetings and training classes as required and assigned. Develops and complies materials need for area’s safety program. Assists in enforcing safety rules. Prepares injury and incident reports after thorough investigation and gathering of facts. Maintains records. Assists in reviewing updating and enforcing department policies and procedures governing Dietary & Food Service.

Supervises the preparation for meal service, arrangement of tray assembly line, dining, presentation, portions control, and proper serving temperatures following HACCP principles. Insures that the staff receives a briefing at the beginning of the meal so they are clear on product served, and portion control. Oversees the operational performance and general conditions of cafeteria and dining room arrangement of dining and serving areas, standards in ware-washing area equipment, and utensils. Prepares work orders as required and reviews with supervisor. Inventories service equipment in Main Dining Room. Develops plans in assessing future needs for additional and replacement equipment. Purchases non-feeding supplies for Main Dining Room and Hospital areas. Assists in writing specifications for equipment and supplies.

Attends and responds to Veterans at the monthly Food Advisory Meeting. Checks food quality by various sensory methods including temperature, sight, and taste. Coordinates with production supervisors for problems pertaining to food shortages, quality, temperatures, etc. Conducts a daily tour of cafeteria and dining room facilities to observe and enforce compliance with sanitation and safety regulations and observes employee efficiency. Observes conditions during operations to insure safe traffic flow and appropriate behavior in the Dining Room. Prepares reports of findings and follow up with plan of correction. Insures maximum service to the client population within the scope of allotted personnel and budget allocation. Observes and reports client satisfaction and /or complaints toward the food served and communicates to appropriate staff. Maintains a food acceptance and wastage record. Develops Quality Assurance monitors and other plans of correction to resolve problems. Informs the Assistant Director of Dietetics or Director of Dietetics of any situation, activity or change requiring special attention.

Oversees catering functions for the department. Monitors nourishments program out of Main Dining Room and coordinates with Assistant Director of Dietetics. Participates in the department’s Quality Assurance program, and Employee Recognition Program.

Attend in-service training classes, which may require travel. Attends and leads regular monthly staff meetings, assist co-workers with any special clean up or extra jobs as related. As required, acts in the absence of the Food Manager. May participate in special events as they relate to the Food Services Dietary Department.
