Duties and Responsibilities:


Under general supervision of the Food Manager and/or Supervising Cook, to prepare, cook, and dispense food for the residents, employees and visitors of a State institution; to care for culinary equipment, supplies, and work areas; to supervise, instruct, and work with other culinary employees and helpers from the resident population; and do other related work.

Prepares, cooks, and dispenses food for breakfast, lunch and dinner. Serve meals on the tray line or cafeteria as needed. Follows cook’s work assignment schedule provided by the Food Manager or Supervising Cook. Cooks a variety of foods, following standardized recipes and methods of preparation. Checks food items for color, appearance and taste to ensure that food quality is of the highest standard. Participates in testing new recipes for menu adaptation. May plan menus. Portions food in correct amounts per meal orders. Reads and follows posted menus for regular and modified therapeutic diets. Maintains progressive cooking of all food items.

Cleans and maintains culinary utensils, equipment and work areas with the assistance of other culinary workers or helpers. Follows daily cleaning schedule. Inspects personnel and working areas and maintains safety and sanitation standards. Reports repair and maintenance needs to the supervisor. Instructs and supervises Cook Specialist I and other culinary workers in food preparation and reports on progress to the supervisor. Requisitions, receives, inspects, stores, and inventories supplies as required. Keeps records and prepares reports. Determines quantities necessary for groups of varying sizes; assist with special resident meals and facility caterings as necessary. In the absence of the Supervising Cook, assumes responsibility of the supervisor. Acts as lead person.

Attends group meetings as scheduled and receives instructions from the Food Manager and/or the Supervising Cook. Attends in-service training as related. Plans work schedules in the absence of the Food Manager or Supervising Cook as needed.
